The exact angle for perfect slicing potatoes was found by English mathematics students. According to their calculations, in order to cook the best baked potatoes, it must be cut at an angle of 30 degrees.
According to the popular recipe for “potato in a rustic way”, tubers should be cut into four parts, boiled, and then baked in the oven. As a rule, potatoes are cut in half, after which each half is divided in half. However, students at the University of Essex found a flaw in the popular method: the most valuable thing in a properly cooked dish is the crispy crust formed on the slices, which means that you can make potatoes tastier by increasing the surface area of the slices. Applying mathematical formulas to the potato, the students calculated that if you cut the tuber not with two perpendicular movements, but with three located at 30 degrees angles, the area of the slices, and hence the delicious crust, will increase by 65%.
Moving from theory to practice, students prepared several servings of “village potatoes”, which differed only in the way they were sliced, and tasted it. Taste qualities of the dish were evaluated both by ordinary people and professional chefs. A video demonstrating the experiment was published on the YouTube channel.
