“This is our first year of experimenting with a new strain. This is a rather unusual potato for Canadian potato growers and there is not much cropland in North America, ”says Kathy Cyre of Pike Lake Farms, recalling the story of a diabetic friend who came to dinner and could not eat the proposed potato.
Ordinary potatoes, as a rule, contain a large amount of starch and carbohydrates, which cause a rapid jump in blood sugar, which is dangerous for patients with diabetes.
“There are a lot of people with diabetes in the North, so it would be useful to produce and sell such potatoes here,” said the farmer.
Researchers at the University of Montana crossed two old varieties of potatoes to create Huckleberry Gold, testing the results over the past four years.
“Everyone who has tried the new strain seems to like it. And when we baked these potatoes, we didn't even need butter. It is also good when fried. During the growing season, no special care was required, just a common agricultural technique, ”said Sayre.
At first glance, this potato has a significant difference from traditional varieties: the peel is shiny dark purple. However, inside the root crop looks like ordinary yellow potatoes.
Studies have shown that Huckleberry Gold potatoes have a low glycemic index (ranking carbohydrates in foods as a measure of their effect on blood sugar) compared to conventional varieties, is enriched with antioxidants and has a high flavor profile.
