There is a growing demand around the world for foods that can be eaten on the go. This trend is a consequence of the ever-accelerating pace of life of a modern city dweller. But having passed the Covid era, people want to pay more attention to their health, so the usual snacks are seriously competed by those that fit into the concept of a “healthy snack” - with a reduced calorie content and retaining the maximum amount of vitamins.

Exclusive product. The vacuum fryer is designed for deep frying foods. Despite the description that scares fans of a healthy lifestyle, you won’t be able to get a dish with a golden crust (burnt edges) using it. Products (for example, carrot, beet, onion chips or French fries) will have a delicate natural taste and look like they were dried in an oven. It's all about the special cooking technology.
How does the frying process work? The prepared raw materials (washed, chopped) enter a chamber from which air is pumped out with a special pump, and excess moisture is pumped out of the product. The raw material is then immersed in oil, fried for the required time, and then raised. The pressure in the chamber returns to atmospheric pressure and the product is removed from the fryer.
Main advantage vacuum fryer in comparison with the usual atmospheric one is that frying of the product takes place at a low temperature (in a vacuum all liquids boil at a lower temperature). If traditional deep-frying occurs at a temperature of 160-180 °C, here it is at a temperature of 60 °C and above. Due to this, the effects of heat treatment on the product are milder: it retains its shape, color, taste, smell and most of the nutrients. Chips prepared using this technology do not contain at all or contain a minimal percentage of acrylamide.
other important feature of the technology: The vacuum removes air from the pores of the raw material before frying, so the oil is practically not absorbed. The maximum oil content in the final product is about 7% (chips from an atmospheric fryer contain up to 30%). For the manufacturer, this is a serious saving in consumables.
What can be recycled? Almost everything is suitable for frying: meat, fish, fruits, vegetables. Vegetable growers can use carrots that are too large or broken, or potatoes that have mechanical damage.
The final product of processing using this technology has a relatively long shelf life - for example, vegetable chips can be stored for up to six months, provided they are properly packaged (the best options: a paper bag with a foil inner layer, a plastic bag with a foil inner layer, sealed plastic packaging) and compliance with storage rules .
